Spinach Pita Recipe

What do you do when you wake up with an abundance of spinach and pita? Make a Spinach pita. Spinach is the base so it’s very light, extremely refreshing and perfect if you’re feeling a little vegan.

Spinach Pita with pickled eggs

1 1/2 cup chopped spinach

1 very ripe avocado

1/4 cup diced tomato

1/4 cup diced cucumber

1/8 cup chopped red onion

2 tlbs lime juice

1 tbls cilantro

Pita bread

Mix first seven ingredients in a bowl. Slice Pita bread in half. Pack mixture into half of pita. Enloy!

Pickled Eggs

Pickle jar

6 hard boiled eggs

4 Cloves

4 Bay leaves

1 tlbs Goya Sazon flavoring and coloring

1/2 jar Vinegar

1/2 jar Rice vinegar

Pickle seasoning

Mix ingredients together in pickle jar and let stand for 2 days to a week.
